Bees on the left. Bees on the right. Bees on every side of the collard plants. Like many crucifers, from brussels sprouts and mustard greens to radishes and Chinese broccoli, collards pack a lot of flavor. Now, with the heat and flowers bolting so fierce bright and yellow, every part of the plant must be downright pungent.
I wonder how the nectar tastes to the bees. I wonder why they seem so eager. Do they need a dipping sauce for the chicken tenders? Do they want to jazz up that salad dressing? Did someone bring a blooming onion to the cook-out? Whatever it is, those bees can’t seem to get enough of that mustard honey.
